Ingredients:
Basmati Rice - 2 cups
Mushroom - 2 cups
Onion - 1 large
Tomato - 1 medium size
Ginger garlic paste - 2 tbs
Green chilli - 6 no's slit
Turmeric powder - 1/4 tsp
Red chilli powder - 1/2 tsp
Corriander powder - 1 tsp
Cilantro and mint leaves - handful
Yogurt - 2tbs
Cinnamon - 3 sticks
Star Anise - 3
Bay leaves - 2 or 3 nos
Salt and oil as required
Preparation:
Wash the rice and soak for 20 mins. Now cook the rice by adding 1.5 cup of water for 1 cup of rice and keep aside.
Wash and clean the mushrooms and cut into big pieces. Slice the onion lengthwise, slit green chilli, and cut the tomato and keep aside. Take a pan add oil when it starts getting hot add cinnamon, bay leave and star anise when its splutters add ginger garlic paste,onion, green chill, and saute until raw smell goes away.Then add tumeric powder, red chilli powder, corriander powder and tomato and saute, after few mins add yogurt and mix well. When it forms a thick gravy add the cut mushrooms and mix well. When done remove from heat. Now add the cooked rice to this gravy and mix well.
Serve with raita/ egg/ potato fry...
