Tea Cake

Makes : 1 big Cake

Ingredients:
All purpose flour/Maida – 2 ¾ cup
Butter - 1 1/2 sticks, or 3/4 cup
Sugar - 2 cups
Eggs - 3
Vanilla extract - 2 tsp
Baking powder - 2 1/2 tsp
Salt - a pinch
Milk - 1/2 cup
Procedure:

1. In a large bowl beat sugar and butter till smooth
2. Add eggs,milk and vanilla essense beat until fluffy
3. Seive all purpose flour, baking powder, salt
4. Blend all the ingredients to get a smooth batter
5. Pour the batter into a greased baking pan

Preheat the oven and bake the cake 350 F.

Malabar Chicken Curry


Ingredients:
Chicken - 1kg (cut into medium sized pieces)
Onion - 3 no's (grind without water)
Tomato - 2 nos (grind without water)
Ginger paste - 1tsp
Garlic paste - 1tsp
Thick coconut milk - 1/2 cup
Thin coconut milk - 1 cup
Chilly powder - 1tsp
Coriander powder - 2 tsp
Turmeric powder - 1/2 tsp
Garam masala powder - 1 tsp
Curry leaves - 1 stalk
Mustard seeds - 1 tsp
Cloves(Grambu) - 3 nos
Salt - As reqd and Oil for frying

Procedure:

1. Heat oil in a pan. Splutter mustard seeds.
2. Add cloves and curry leaves.
3. Add onion and tomato and saute for a few minutes. When the color changes, add ginger and garlic paste and saute, till the raw smell goes away.
4. Add the chicken pieces along with coriander, chilly, turmeric and garam masala powder, mix well and stir for few minutes.
5. Add thin coconut milk. Add water as required and salt to taste. When chicken is fully cooked, add thick coconut milk and allow it to simmer for few minutes.

Serve hot with rice, chapathi, porotta, idiyappam
